Noodles in Vinaigrette

2 pcs. magi chicken cubes

259 g. sotanghon or bihon

1 cup minced onions, fried

1 pc. Green bell pepper, cut into strips

1 pc. Red bell pepper, cut into strips

1 head garlic, minced and fried

Topping Variations:

½ k. shrimps, cooked and shelled or

¼ cup stir-fried and seasoned ground pork or

1 can spiced tuna flakes

Dressing:

¼ cup vinegar

4 tbsps. calamansi juice

¼ cup fish sauce (patis)

3 tbsp. sugar

1 tbsp. maggi savor

Brink to boil Maggi Cubes and 4 cups water.  Add sotanghon and cook for about 5 minutes.  Drain, transfer to a platter and arrange next 4 ingredients on top with desired topping (cooked shrimps or ground pork or tuna flakes amy be alternately used).

Meanwhile, combine dressing ingredients and pour over prepared noodles.

Crab Flake Salad

2  crab flakes, canned or fresh

2  tablespoon lemon or calamansi juice

1  small onion, grated

2  tablespoon red or green pepper, chopped

2  table celery, chopped

¼  cup French dressing

½  teaspoon salt

1  cup mayonnaise

Procedure:

  1.  Place all ingredients in a bowl, toss lightly together.
  2. Chill; serve on lettuce leaves

Avocado/Pineapple Salad

Ingredients:

2  pcs avocado

4  pcs calamansi juice

4  pcs pineapple slices (canned)

100  gms Baguio lettuce

½  cup low fat cottage cheese

¼  cup honey chopped mint (optional)

Procedure:

  1. Cut avocados lengthwise into halves; remove peels and seeds
  2. Cut each half into 8 pieces crosswise; sprinkle with a lemon/calamansi juice to prevent discoloration.
  3. Cu pineapple slice into halves.
  4. Spoon cottage cheese over the greens to make a base for the pineapple and avocado slices.
  5. Reassemble one avocado half over each serving of cottage cheese, alternating avocado pieces with pineapple halves.
  6. Pour over pineapple and avocado slices.

Per Serving:

8 gm fats, 2 mg cholesterol, 4 mg sodium, 208 cal calories, 19 gm carbohydrates, 1 gm protein

Chicken Fruit Salad

2  pcs apples, medium, diced

1  tsp calamansi juice

200  gms boiled chicken meat, diced

1  cup  pineapple chunks

4  tbsp mayonnaise

¼  tsp  curry powder

¼  cup cashew nuts

1  tbsp raisins

Procedure:

  1. Peel and dice apples.
  2. Sprinkle with calamansi juice.
  3. Chill
  4. Spoon individual portions onto salad geens and serve cold.
  5. Garnish with rainsins

Per Serving:

11 gm fats; 28 mg cholesterol; 74 mg sodium; 183 cal calories; 10 gm carbohydrates; 8 gm protein

Carrot Raisin Salad

4-5 pcs carrots, medium        

½ cup raisins

¼ cup mayonnaise

½ cup low fat yogurt

2 pcs calamansi (juice)

Procedure:

  1. Scrub carrots, scrape the peeling and shred.
  2. Combine with raisins
  3. Mix together mayonnaise, yogurt and calamansi juice.
  4. Pour over salad and mix thoroughly.

Per Serving:

8 gm fats; 7 mg cholesterol; 107 mg sodium; 134 cal calories; 17 gm carbohydrates; 2 gm protein
