Sesame Noodles

Sesame Noodles

Prep 15 minutes

Cook about 15 minutes
Make 6 main-dish servings

Salt

1 package (16 ounces) spaghetti

1 cup fresh orange juice

¼ cup seasoned rice vinegar

¼ cup soy sauce

¼ cup creamy peanut butter

1 tablespoon Asian sesame oil

1 tablespoon grated, peeled fresh ginger

2 teaspoons sugar

¼ teaspoon crushed red pepper

1 bag (10 ounces) shredded carrots (about 3 ½ cups)

3 kirby cucumbers (about 4 ounces each), unpeeled and cut into matchstick-thin strips

2 green onions, thinly sliced

2 tablespoons sesame seeds, toasted (optional)

Green onion for garnish

 

1.   Heat large saucepot of salted water to boiling over high heat.  Add pasta and cook as label directs.

2.   Meanwhile, in medium bowl, with wire whisk or fork, mix orange juice, vinegar, soy sauce, peanut butter, oil, ginger, sugar, and crushed red pepper until blended; set sauce aside.

3.   Place carrots in colander; drain pasta mixture, cucumbers and sliced green onions with sauce in bowl.  If you like, sprinkle pasta with sesame seeds.  Garnish with green onion.

Picnic Potato Salad

Picnic Potato Salad

3 cups diced cooked potatoes

1 cup sliced celery

½ cup shredded carrot

½ cup chopped green pepper

¼ cup chopped onion

½ cup mayonnaise

½ cup sour cream

¼ cup Del Monte Sweet pickle relish

1 tsp. salt & a dash of pepper

 

Combine potatoes, celery, carrot, green pepper and onion.  Blend mayonnaise, sour cream relish, salt and pepper.  Fold into potato mixture.  Chill several hours.  Makes six servings.

Cauliflower Salad

CauliflowersaladRECIPEIngredient:

½  pc cauliflower head, small, sliced

1  pc Baguio lettuce head, small

    Dash ground pepper

2  pc carrots, shredded

¼  cup peanuts, chopped

Procedure:

  1. Slice the cauliflower in about ¼” – ½” cuts.
  2. Slice the part near the stalk very thinly.
  3. Tear Baguio lettuce into small pieces.
  4. Toss all ingredients together lightly.
  5. Add pepper to taste.
  6. Mix together and pour over salad).

Per Serving:

4 gm fats; 0 cholesterol; 23 mg sodium; 70 cal calories; 12 gm carbohydrates; 5 gm protein
